Møns Klint

Hey lovelies,

live has been very hectic in the last two weeks. I promise from now on it is getting better. Especially the next two weeks around Easter will be rather relaxt, though I do not have actual time off. But from May on I will not have to work on Fridays anymore and weekends are actually weekends :)

This weekend I actually had to clean the apartment but instead we went on a little trip. The boyfriend just needed some time off after the last week so we took a little trip to Møns Klint, the “Cliffs of Møn”.

Here a little Wikipedia description:

“Møns Klint, English: the Cliffs of Møn, is a striking landmark and tourist attraction along the eastern coast of the Danish island of Møn in the BalticSea. The bright chalk cliffs stretch some 6 km from the park of Liselund in the north to the lighthouse in the south. Some of the cliffs fall a sheer 120 m to the sea below. The area around Møns Klint consists of woodlands, pastures, ponds and steep hills, including Aborrebjerg which, with a height of 143 m, is one of the highest points in Denmark. The cliffs and adjacent park are now protected as a nature reserve. Møns Klint is popular with tourists from across Europe with some 250,000 visitors a year. There are clearly marked paths for walkers, riders and cyclists. The path along the cliff tops provides impressive views and leads to steps down to the shore in several locations.”

NOTD – OPI “Did You ‘Ear About Van Gogh” with Deborah Lippmann “Happy Birthday”

Two of my currently favorite nail polishes. I love the nude of the OPI color and even though it was quite a hassle to get “Happy Birthday” shipped to Denmark (and quite expensive) it was worth it as I love the colored glitter a lit!

I think putting a bit on one finger (i.e. the ring finger) spices up every nail outfit and is still wearable even in a conservative working environment.

I used two layers of the OPI nail polish, which worked quite well (I usually HATE having to put on two layers).  Before you put on the glitter you have to wait quite a while though because the polish takes very long to dry through if applied twice.  Even though I waited around 10-15 minutes for the second layer to dry it was not quite enough but with the glitter you can barely see it that it is a tiny bit smudged (and I showed you the hand where it was barely visible) :)

New In – 7 For All Mankind

Candy colors – that is the trend of the spring season. And I was also looking for a nice pair in peach or mint.

I therefore grabbed the boyfriend on Saturday and dragged him into town. We stopped at countless stores (Zara, Levi’s, Topshop – to only name a few) and I tried on even more different pants/jeans. Unfortunately nothing fitted, was the right color, or there in my size. The last stop before we headed home was the “7 For All Mankind“-store on Strøget. Apparently they opened already last June but it took until two weeks ago that I noticed the store (to my defense: last June I was saving money for the States, where everything is just way cheaper and afterwards I was good on shopping for quite a few weeks).

I found those awesome pants and tried them on in my regular size (I love 7 For All Mankind and already own 4 pairs and therefore know, which size I usually have) – and guess what… they fitted perfectly! I do not know what it is about this brand but it makes my legs and butt look awesome. I have huge problems with my rather big “handle bars” even though I am otherwise quite skinny. It is therefore worth every penny!

I cannot wait to show you some outfit posts (the boyfriend promised to take pictures on the cruise we are taking to Oslo!!!) and to wear them for the first time. I can just imagine myself wearing them with a nice white shirt and some leather sandals or ballerinas. Summer – here I come!

The World’s Best Apple Pie

I am sick in bed with a migraine (it started yesterday around noon and still keeps on bothering me so that I can barely keep my eyes open). But hunger made me get up out of bed and I had to see that we have nothing in the fridge. The boyfriend then suggested that I could make the apple pie, which we did not make for my birthday. As it is a super easy to make and amazingly delicious I thought I share my way of making it.

What you need:

  • 1x pie dough (yes, you could make it yourself, but this recipe is meant to give you a quick and delicious pie, so why bother if you can buy them already done)
  • 4-6 apples (how many you need exactly depends on their size, you can decide yourself if you want to take more sweet or more sour-tasting apples)
  • 3-4 cups of flour
  • 2,5 cups sugar
  • 150g butter
  • 3 TS lemon juice
  • 2 TS cinnamon
  • sour cream (for afterwards) 

1st Step: Take the apples, wash and dry them and start cutting them into thin slices.

2nd Step: But the cut apple slices into a bowl and add the lemon juice (for taste and so that the apples do not turn brown), 3 TS of sugar and the cinnamon. Now mix it all up and let it soak in.

3rd Step: We have to prepare the crumbles for the topping. We mix the butter, the rest of the sugar and the flour. Start mixing it with your hands and knead it until it looks like above. Do not knead it too much and watch out that the butter stays cold enough!

4th Step: But the pie dough into a pie form and cut off the excess. Afterwards but in the apples but watch out to not get the juice in as the pie might turn out to soggy.

5th Step: But the crumbles on top of the pie and put it in the pre-heated oven. The pie needs about 30 minutes with 180 degrees celsius. Take and give a few minutes.

6th Step: Take out of the oven and let it cool down! The juice as to be sucked up by the cake again so it needs a while after it has been in the oven. Eat it with a bit of sour cream to make it less sweet. Enjoy!

PS: This is the pie after 20 minutes. Afterwards I put it back in and gave it another 10 minutes. It varies from time to time :)

Some Birthday Weekend Impressions

I decided to do nothing special for my birthday to be honest. I knew all of my family is celebrating my grandpa at home (his birthday is on the same day) and in the last couple of years I always joined them, even if it meant flying in from abroad. This year I decided against it because it was not worth the money for only two short days and we will drive down to Germany over Easter and have more time :)

But now to the question everyone is asking: What did I get? Well, the boyfriend got me/us a mini cruise from Copenhagen to Oslo. We will leave Copenhagen Friday afternoon and return on Sunday late morning. We booked the weekend around April 14th and I am already super excited! I did not get anything from my sister or parents/grandparents yet as we have not been there. But I will get my presents on Easter (exited!!!!).

And here we go with some birthday-weekend-impressions:

Delicious Chinese Buffet on Friday evening - totally on the Asien food trip at the moment. We had Thai take out on my actual birthday on Sunday. And we will try another Asian buffet next Saturday before the movies :)

By the name and the picture I assumed that this would be a delicious iced coffee drink. Unfortunately it turned out to be just a milk, which is more suitable to foam than other milks. Major FAIL.

Ny Carlsberg Glyptotek - the place where Christoffer and I were supposed to have our first date, which never happened (we met by accident at a party the night before even though we both wanted to stay in and due to the hang over never went on the date). We ended up as a couple after all. In almost two years we never made it there and on Sunday he took me here for a birthday brunch :)
