Low Carb Pizza

So, I “stole” this little recipe from Claudia from BeautyButterflies, who is currently living on a low carb diet. As I currently have a bit of time due to studying because I like to distract myself from studying, I though I give this a try as well. I stuck (almost) 100% to the descriptions and amounts in Claudia’s blog post, however I would do a few things differently next time (but where and what I will be writing below where it belongs).

This is what you need:

  • 200g carrot
  • 300g zucchini
  • 1 egg
  • 1 table spoon  of flower
  • salt & pepper

For the topping:

  • 1 can of thieved or cut tomatoes
  • salt & pepper
  • oregano
  • mozzarella

You can put on the pizza whatever you like, however I would not put too much on it. I stuck to thin sliced chicken breast, fresh mushrooms and mozzarella cheese.

You start by grinding the carrots and the zucchini and afterwards add the flower, the egg and season it with salt and pepper. Now put packing paper into a casserole and add the carrot/zucchini mixture on top and spread it out evenly.

You now have to heat the “dough” for approximately 1 hour in the oven at 250 degrees Celsius. After that hour the dough should be somewhat crispy and will probably be quite dark on the top, which is just fine though.

NB: As 250 degrees Celsius is very warm, the backing paper will start getting quite dark and might start to disintegrate (see next picture below), which annoyed me a little bit. So for next time I have to find a different solution instead of the backing paper. Due to the long backing time I am not sure what else to use though (just lubricating the casserole with butter might not cut it).

While backing the dough, open the can of tomatoes and start cooking them to get all unnecessary liquid out of them. Just so you know: it will take almost the whole hour. Add salt, pepper and oregano to finish the sauce.

NB: I personally hate tomatoes (and am allergic against them when eating them raw) but they are okay when they are pureed. So I used a puree stick to get a smooth tomato sauce instead. I also added 2 table spoons of ketchup, just because I love the taste (we do however have that special ketchup from Heinz, which is ecological and with less sugar).

After 60 minutes take out the pizza bottom and spread out the sauce on top of it. Add the toppings of your choosing and finish with a layer of cheese. Afterwards the pizza will need another 15 minutes at 250 degrees Celsius.

The ingredients where enough for two bigger portions. You cannot really tell that the dough is not “real” dough because it does not taste like “veggies” at all – something which is probably a very good trick for making kids eat it as well :)

In general I love the idea of a low carb pizza but you have to realize that this pizza takes quite a bit of time and work. The grinding takes some time and makes a bit of a mess (thank god we have a dishwasher) and you constantly have to have an eye on the tomato sauce so that it does not burn. I also think it is quite “little” what you get out afterwards, considering the amount of work (so when making it just grind twice the amount and make two casseroles if you happen to have to – of course only if you actually have enough people to eat the result). In total the whole pizza took me around 1 hour 45 minutes (including making food and cleaning up afterwards). It was however super delicious and I will definitely try something similar again.

Monday started with a visit at the dentist. Thankfully he did not find anything and just told me to stop pushing my lower front teeth with my tongue, as there is a tiny gap between my teeth, which started to become bigger.

Tuesday it was back to school. While in Germany I stocked up with tea and I was finally able to try out my new Princess Lillifee tea, which is strawberry and raspberry flavored. Yummi.

On Wednesday I finally had time to get to the post office and pick up my Asos purchase. One of the things was this Carmex Lip Balm in Strawberry. Love the combination of Strawberry flavor and tingly mint on my lips.

My new nail polish from Chanel, which I got while I was in Germany as well. I still did not have time to put it on my nails as by Thursday I was unfortunately sick and had to stay in bed but as soon as I am up and running again I will definitely add this as a touch of color. Such a lovely pink with a clearly visible hue of gold.

Another nail polish I got a few days ago is this China Glaze one. It’s called Whirled Away and is from the Cirque du Soleil collection. I got this one and Get Carried Away on sale at beautybay.com.

Sick me before I had to head of to the supermarket to stock up on a few survival things (and toilet paper, which I was out of, lol).

My freshly pressed mandarin juice. I used 6 mandarines for one glass of juice. It was weird how even the pure juice started to divide up into two layers (as seen in the picture) within minutes. I still have to figure out what the juice was missing (that special something, thinking something sweet).

I love love LOVE Pink Sands from Yankee and will definitely have to get more of those tartes. This is such a lovely sweet and girly smell. Christoffer would hate it but as I am alone most of the week(s) it is just fair enough that I have this burning :)

My lovely nurse took care of me on Saturday evening and made a Thai soup with coconut milk and peas for me. So yummi and I will definitely make this again soon. Follow my dear friend on Instagram under @sophisticatedisabella!

Fall Time is Pumpkin Time

I admit – I do not like pumpkins. At least when it comes to eating them. I think the smell is really repelling and I just do not like it. Though I absolutely love everyone making pumpkin bread, pumpkin soup and drinking Spiced Pumpkin Lattes at Starbucks – I wish I would like it as well.

This has never stopped me from using pumpkins as decoration though. As a kid we carved out pumpkins on a regular basis to put them in front of our house in the fall and last year (we happend to be in the States until shortly before Halloween) we also kept up with that tradition including lots of Halloween candy.

This year I will stick to those three cute little pumpkins for our living room decoration. As we do not have access to all that amazing American Halloween candy and as we also do not really have the place to put a carved out pumpkin (except on the balcony) this will have to do.

What do you think? Are you using pumpkins as decoration and what kind of pumpkin recipes do you know? Anything I can maybe try, which is not too “pumpkinish” in taste?

Home Made Pizza

When it comes to recipes I am a little copycat. On the other hand I believe that is what sharing them online is all about – for others to try out some amazing food. I therefore enjoyed very much trying out the recipe Vicky posted on her blog about 2-3 weeks ago.  The “bruschetta pizza” is my boyfriend’s favorite and as I was in the mood for some cooking I thought I try it out and share the result with you guys.

The pizza is very easy to make and you do not even need that many ingredients. The following measurements will give you two average size pizzas.

For the dough:

  • 300 gr. flour
  • 20 gr. yeast
  • 150 ml water
  • 2 table spoons olive oil
  • 1 teaspoon salt

For the bruschetta topping:

  • 1 red onion
  • 12 cocktail tomatoes
  • Salt & pepper

For the general topping:

  • Mozzarella
  • Tomato sauce
  • Arugula
  • Salami
  • Parmesan cheese in little strips

For the dough you put the flour into a bowl and add some salt. Then you warm up the yeast in the water. Vicky suggested warming the concoction of yeast and water in the oven for 5 minutes with 50 degrees Celsius.  I did that as well but if you use warm water it is not necessary.

Add the concoction to the flour and add the olive oil. Mix until the dough is not sticky anymore. You can easily test that by just taking it into your hands. When it does not stick to your fingers anymore the dough is ready.  Knit it into a ball, place it into a bowl, cover it with a towel and let it stand for 1-2 hours, while the dough rises.

When you are ready to prepare the actual pizza knit the dough through one more time and divide into portions. As mentioned the amounts from above will give you two average size pizzas so you basically have to split the dough only in two.  Roll out the dough as thin as you fee like it.

For me I can say; the thinner the better. Put the rolled out dough on backing paper and cover with tomato sauce and mozzarella. I added salami before the actual packing process, as I prefer that. Bake with 200 degrees Celsius for around 12-15 minutes (it always depends on the oven though).

While the pizza is in the oven cut the onion and the tomatoes into little cubes. It should be around 1/3 onion and 2/3 tomatoes but mix as you please. I just think that it becomes to “onionish” when it is mixed half/half. Add salt and pepper as you please.

When the pizza is done put arugula, the “bruschetta” mix and the Parmesan cheese on the pizza as you please. Enjoy while it is warm and fresh :)
